World Class Cocktails at Home - The Bahay

A toast to our Philippine team in Diageo Reserve World Class, I take three ingredients that are distinctly Filipino – tamarind, pandan, and coconut, and turn them into a refreshing cocktail.

A constant source of inspiration to me is the house I grew up in. Looking back, the most striking memories for me involve walking around the kitchen and taking in the aromas and flavors of fresh ingredients and home-cooked meals.

World Class Cocktails at Home – The Bahay

Ingredients

  • 3 crushed tamarind
  • pandan leaves
  • 1 cup of water
  • 2 cup of sugar
  • 30ml Johnnie Walker Gold
  • 30ml Johnnie Double Black
  • 22ml Dry vermouth
  • 40ml fresh coconut water
  • 30ml syurp

Instructions

  1. 1 Bring the water to a simmer with the leaves and tamarind for about 10mins.
  2. 2 Add the sugar and dilute and cook at a simmer for 3 more minutes. Chill.
  3. 3 Mix all the ingredients together with ice and strain on ice in the coconut.
