I always listen to my subscribers. I find that it’s a great way to crowdsource ideas. One of my subscribers, who is also a shopper at Landers Superstore, suggested a very interesting challenge. His favourite food is Ilocos Empanada. It’s not that easy to find it around Metro Manila, so I accepted the challenge! Could I make this Northern delicacy at home?

Ilocos Empanada is an orange-tinged fried dish stuffed with vegetables or papaya, skinless Vigan Longganisa, and egg. Nowadays, there are many additions to the empanada. Some add bagnet, mongo, and even hotdogs. You can find some with two eggs instead of one. I decided to make mine a little basic, since I haven’t really made one before. Watch my video below!

Recipe

Dough

  • 3/4 cup rice flour
  • 3/4 cup water
  • 1 tbsp dark atsuete oil
  • 1/2 tsp salt

Filling

  • 4 pcs spicy/garlic longganisa
  • 1 pc green papaya, grated
  • 1 egg per empanada
  • Salt and Pepper to taste
  • Coconut oil for frying

I find that the best place to get all of these ingredients would be at Landers Superstore. It’s a one-stop shop for all your kitchen needs. There are now 4 branches around Metro Manila for your shopping convenience:

  • Landers Alabang West
  • Landers Balintawak
  • Landers ArcoVia
  • Landers Otis
