With the holiday season upon us, family and friends gatherings come thick and fast at this time of the year. Whether you are visiting or hosting, I find that having a simple and yet impressive set of dips will always make party preparation much easier. Serve the dips with different types of crackers and breads, along with a cheese platter and fruits; and of course with all your cold ham and turkey, Christmas pudding and all the other delicious things on the side!

Jalapenos Avocado Dip

Portion: makes 1 cup

Ingredients:

  • 2 ripe avocados
  • ¼ of red onion, finely chopped
  • 6-8 pickled jalapenos rings, roughly chopped
  • 1 handful of chopped coriander
  • Juice of 1 lime
  • Salt & pepper to taste

 

Instructions:

  1. Cut the avocado in half, remove the seed and scoop the flesh out into a bowl.
  2. Use a fork to mash the avocado.
  3. Add the red onion, jalapenos, coriander and lime and mix with the avocado.
  4. Add salt and pepper to taste.
  5. Store it in a container in the fridge until it is ready to be served.

 

Mango Salsa

Portion: makes 1 cup

Ingredients:

  • 1 large ripe mango, diced
  • 1 tomato, diced
  • ¼ of red onion, finely chopped
  • ½ big red chilli, finely chopped
  • 1 handful of chopped coriander
  • Juice of 1 lime
  • Salt to taste

 

Instructions:

  1. In a serving bowl, combine the prepared mango, onion, chilli, tomato and coriander.
  2. Add the juice of 1 lime and season to taste with salt.
  3. Store it in a container in the fridge until it is ready to be served.

 

 

Beetroot Chickpeas (Hummus) Dip

Portion: makes 1.5 cups

Ingredients:

  • 2 cups of cooked chickpeas (or 1 tinned chickpeas, drained)
  • ¼ cup chickpeas brine (or ¼ of water)
  • 1 roasted beetroot* (or 5 slices of tinned beetroot)
  • 1 small garlic
  • Juice of 1 ½ lemon
  • 1/3 cup of tahini
  • 1 teaspoon of cumin
  • ¼ cup of olive oil
  • 1 teaspoon of salt

*If beetroot is hard to source in your area, you could use 2 roasted carrots instead. The sweetness coming from the carrot is as equally delicious, however, instead of adding ¼ cup of water, increases it to 1/3 of a cup (or more if needed) to thin out the consistency of the dip.

 

Instructions:

  1. Mix all the ingredients in a blender and blend until smooth and creamy.
  2. Store it in a container in the fridge until it is ready to be served.
