Once upon a time, Solenn said that I can’t bake to save my life.
I decided to challenge her to a bake-off, to see if I really can’t bake once and for all. The judge of this competition? We brought in the biggest cookie monster in the office, Nico Bolzico, to determine the winner. By having conflicts of interest on both sides (he’s Solenn’s bullied husband, and he’s my brother-in-law and generally loves what I cook for him), we ultimately thought this levelled the playing field. Real bakers can tell just by looking at a recipe whether the outcome is good or not. Can you tell whose cookie will be better just by looking at our recipes? Try it out for yourselves at home! - 2 cups flour
- 2 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup butter
- 1 cup brown sugar
- 1/2 white sugar
- 1 egg + 1 yolk
- 1 tbsp vanilla extract
- 1 tbsp Golden Fiesta Canola oil
- 1 cup unsweetened chocolate chips and 1 thick cut chocolate bark
- Baked at 175c 6 to 9 mins
- 3 cups flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 cup room temp butter
- 3/4 cup brown sugar
- 1/2 chip white sugar
- 1 tsp vanilla essence
- 1 tsp salt
- 1 cup unsweetened chocolate chips
- 1/2 cup walnuts
- Baked at 175c for 8-10mins

Here’s what I learned from this challenge:
I should’ve lessened the flour to 2.5 cups, added a cup more of chocolate chips, and dropped in a tablespoon of oil into the cookies. I probably should’ve baked them for a shorter amount of time as well.
