I love waking up to a nice piece of toast for breakfast– it’s a quick and easy way to get all the nutrients I need for a long day. I’m sharing with you 4 recipes that will soon become your bread and butter (literally!). Try them out and let me know what you think (cooking starts at 5:23)!

For the bread, whether it’s the rye or the sourdough, always start by slicing it thick, at least 1 1/2 to 2 inches.

Then in a skillet, slowly melt 3 tsp of Anchor Butter, add in 2 cloves of crushed garlic, a small pinch of salt. Start the bread on one side until it gets nice and toasted. Flip. And you’re good to go with the other toppings. For extra savoury flavour, go ahead and lather an additional 1/2 tsp of salted butter on the hot toast.

RECIPES:

PIZZA BREAD ingredients:

  • 1 minced white onion
  • 2 pitted tomatoes
  • 4 portobello mushrooms
  • 1 tbsp olive oil
  • 2 cloves of crushed garlic
  • 300 grams, whole peeled canned tomatoes (or fresh poached and skinned)
  • salt and pepper to taste
  • 3 tbsp balsamic vinegar
  • 1 tsp sugar
  • 6 basil leaves
  • 1/2 cup grated mozzarella
  • basil leaves to dress
  • Buttered garlic toast (see above)

Instructions:

  1. Fry off the onions, mushrooms and fresh tomatoes with some olive oil in a medium heat skilled. 5 mins later, add in your garlic, balsamic vinegar and sugar, cook for 2 mins. Add your canned tomatoes, salt and pepper and basil leaves. Let stew along slowly for about 10 mins, until it thickens.
    2. Spread a thick layer of your tomato sauce on the hot buttered toast. Top with basil and mozzarella. Toast the top.

ONION JAM TOAST ingredients:

  • 4 Large white onions sliced
  • 2 tbsp of olive oil
  • Buttered garlic toast (see above)
  • salt to taste

Instructions:

  1. In a large skilled, heat up olive oil on a low heat, add in the sliced white onions. Stir every 2 mins. Cover and keep on stirring until you get a nice soft sweet brown mess.
  2. Smear as much as you can on your toast. This should keep for 2 weeks in the fridge easy.

AVOCADO TOAST ingredients:

  • 1/2 avocado cubed up
  • salt and pepper to taste
  • Buttered garlic toast (see above)
  • slices of radish to garnish
  • lemon juice (option to dress)

Instructions:

  1. Top the toast with the avocado, season, add radishes.

FRENCH TOAST ingredients:

  • 3 eggs
  • 1/2 tsp cinnamon powder
  • 3 drops of vanilla essence
  • 1/4 cup flour
  • 1 cup of milk
  • 1 tbsp Anchor Butter
  • 2 thick pieces of sourdough
  • Honey and butter to dress
  • Any fruit as a topping

Instructions:

  1. Mix the eggs, cinnamon and vanilla.
  2. Add in the flour and milk. Froth up. Marinate the bread and leave at least 30 mins or until it’s almost falling apart.
  3.  Heat up your butter in a heavy skillet. Start your bread on one side. Cook for 4 mins. Flip and cook for another 4 mins.
  4. Top with butter, honey and fruit.
