Skill Shop #6: A simple carbonara pasta

The words “spaghetti carbonara” evoke such pleasant memories of my visits to Italy.

There is a certain respect for the ingredients used in the dish and it is a delicate dance between the fatty sweetness of freshly cut bacon, bright olive oil, creamy egg yolks and a the distinguishable undertone of garlic. That’s right. That’s it.

No, there is no decadent heaviness of cream or burst of sweet pea juice or defrosted refried bacon bits; those are simply wasted interpretations of an already winning combination.

The problem with carbonara is that it can be quite fattening. In truth, when compared to an arrabiata sauce, the difference in calories is quite consequential.

Since most of you have been reading my blog for a while now, you know that I believe in cycling carbohydrates (taking them only when needed, before or after a hard workout), but since pasta makes me happy, i had to find a way around my nutrition rule.

So here is a recipe that uses the proper carbonara technique but with healthier ingredients. Instead of egg or flour pasta, I used quinoa flour pasta (it’s great because it has good-for-you carbs and is gluten/wheat free) and instead of gloriously fat bacon bits, I opted for a lean piece of bacon used to flavour turkey ham. In short, a perfect combination of good carbs (quinoa), good fat (lean bacon and olive oil) and protein (turkey ham and eggs).

This was absolutely delicious and im sure I can full so many people with it.

Enough talking, here is the video

Instructions: Boil salted water for your pasta. Get a frying pan nice and hot. Add your pasta to the salted water and cook until al dente.

In the frying pan, place some Filippo Berio, and cook a piece of turkey ham with a  very lean piece of back bacon until almost crispy, then add two whole crushed bulbs of garlic until slightly brown. In a bowl mix 2 eggs with 2 tablespoons of freshly grated parmesan cheese.  Once the pasta is cooked, with the help of tongs, transfer it to the frying pan and mix well. Take it off the heat and quickly add your egg mix, while stirring constantly until it is all very sauce, but make sure your eggs don’t set or curdle. Top with more shaved cheese.

Finish off with some extra virgin olive oil and taste to season.

I’m somewhat biased when it comes to olive oil and my favourite brand is Filippo Berio. Its available basically everywhere and is flown in from Italy. Great taste, flavours and not to obtrusively powerful like some. This recipe calls for both their Olive Oil and their Extra Virgin Olive Oil.

      Can you make a list of a directory of where you buy your ingredients from. its not common to find quinoa pasta. So a list of your shops or delis that you buy your cookin ingedients from would be good.

      One of the quickest pasta dish, my 2 boys who love pasta and very picky at the same time this dish is a winner, usually I would slave in the kitchen for 30 minutes to an hour just to satisfy my 2 rascal taste buds and only after 2 to 3 bites they’re done. Instead of using bacon I used sliced meatballs, and russian ham. I like your way of cooking Erwan, practical, easy, and not to mention healthy. Next dish I’ll try to make is the chicken Inasal now I have to figure how to do it a more authentic and organic way, since ingredients are not the same as in the Philippines. Bu I’m sure wouldn’t stop me to try your scrumptious Inasal recipe.

      I just tried your recipe a couple of minutes ago and I must say the pasta was creamy sans the cream. The egg mixture did the trick. Eggmazing!
      I did not use the same ingredients that you have in the recipe. I replaced them with what I have at home: wheat capellini, sliced SPAM lite, and ready parmesan cheese. Still, the taste was surprisingly satisfying. Unexpectedly delicious!

      This is kind of like Amatriciana…minus the tomatoes…and the bacon…ok. So its different! haha Would you ever make your own pasta? That might amp this recipe up to another level of freshness. The kitchen aid pasta attachment has been a life saver!

      I’m a carbonara purist myself and I’m thankful for this healthier version.

      I’ve been taught by my Nonna of the family I stayed with in Italy to do as you did, use whole eggs.

      Just wondering though, does Quinoa pasta have a different taste? How many calories do I save by using Quinoa?

      How about also featuring authentic Tiramisu next?

      i cooked this and i fully cooked the egg..so my “sauce” was gone. i wasnt sure the sauce you made in the video is fully cooked? my cabonara was still good though bc of black pepper..ham..and bacon.

      I started this diet and i discovered that egg yolks contribute 3x calories as compared to using egg whites only. Would it be weird if i don’t include the yolk? Or given this is a healthy recipe, i can just include the yolk?

      Thanks for this recipe! It’s really good, not ‘substituted’-tasting at all. Great for busy, on the go people like me. Even my amazing cook of a husband complimented MY cooking hehe.       Kuya Erwan!!! I just tried cooking tonight this carbonara recipe you’ve shared years ago and…the taste is so unbelievably flavourful despite the simplicity of the cooking. And it made me feel like an expert even if I just followed your instructions. Do you have these kinds of healthy foods in your menu in your restaurants?
