The Filipino Bahn Mi

This week’s food video is all about Porn, even the way we shot it is straight the point and mostly visual.

Enjoy this visual treat we made with Chef Ed of Pino, Pipino, BRGR Project on Jupiter street (Makati) and Mahingawa (QC), all good restaurants.

He also makes killer amounts of kilos of Bagnet daily, so i called him up, asked him if he had any ready, he said yes, i said i was coming over and lets make a Bahn Mi.
It really is a mix match of different recipes and cultures, but this is what evolving Pinoy food should feel like, fresh, whole, soulful and delicious.

A bun, some meat, acid, vegetables, nothing brings more soul to a sandwich then this. A hot crisp bun between your hands is a weapon of replenishment.

For the chicken liver pate, i’ve always used this recipe

For the pickles, really simply enough, grate some vegetables, here we use carrots, cucumbers, singkamas, place them with equal parts salt and sugar. Cover them and leave them in the fridge for 30 mins, rinse with cold water.

For the sauce, toss together some rice vinegar, chillies, sugar, fish sauce, grated ginger and hoisin sauce. Mix and dose to your liking.

Watch the video, combine everything between a crispy baguette, top with the sauce and some sriracha.

about THE FAT KID

I gained weight because of a sedentary lifestyle and overly indulging in foods I knew were bad for me, eating out too often, taking the easy route (microwavable dishes) and not caring what went in my body, before I knew it reached 240 lbs. I lost weight through pure dedication, tireless hours of hard work and yes, food.
