Happy Monday to all of you, so what should i cook on my next Pig Out Day (This could be the name of a dish, a story, a recipe, a picture…etc)?

The person who hits my craving on the head and gives me some fun inspiration for the dish will obviously be credited when i do the video recipe and post in the following week. Just follow the theme and make sure your suggestion is something i can build on, or something you’ve always wanted to know, taste, make at home, etc.. Don’t forget to let the fat kids out, this is for pure enjoyment and indulgence!

For this week, the theme is:

  • PIG OUT DAY: Noodles.

This could be anything from pasta, to ramen, to rice noodles, to stir fries, pancit, etc… the options and possibilites are endless!

PS: i might give prizes to the person who gives me idea/recipe/inspiration for the post! i’ll keep you posted on this. I’m just trying to figure out what a good present would be? Any Suggestions? – Still Waiting

two saturdays ago, i watched Gordon Ramsay’s Kitchen Nightmare on the TLC channel and Campania restaurant was featured (i didnt know it all happened in 2007). After the show, the restaurant and the chef/owner Joe Cerniglia was awarded with “the best meatballs” in New Jersey”. This made me craved for the classic spaghetti with meatballs. I searched for his name and the recipe in the internet, and i found out he allegedly committed suicide and died in 2010. What a sad and tragic event……. but i still crave for a hearty and healthy spaghetti with meatballs.

I want to learn how to make Tonkotsu Ramen but I heard it takes more than 12 hours preparation time for the broth. Is there a way to lessen cooking time without compromising the rich and creamy taste? :) Hope you can feature this dish! :D

Tom Kha or Tom Yum! Always loved the flavors but it’s a dish so daunting! Perhaps you can teach us the proper technique! I cooked carbonara using your video. And I now only use filippo berrio olive oils due to your recommendation Lol. But back to the Tom Kha or Tom yum please! :-)

    1. K September 11, 2012 at 12:53 am

pasta with fresh corned beef –you choose what sauce to do with it :)

    1. Levon Frilles September 11, 2012 at 2:33 am

Hand Pulled Egg noodles with everything on it! It’s a pig out day, and noodles can be topped with everything you want, and just create a nice master stock. You could put any type of seafood, pork crackling, chicken floss, beef, some veg. and it will different textures.

    1. Aya September 11, 2012 at 2:48 am

      Hi bro,

If I may kindly suggest since it is Pig Out Day 2, had I had the chance to do it, I would primarily use meat whatever it is that is desired, in this case Pork + Booze. YES BOOZE, good-‘ol Jack D. So here is what I have planned. Heaps of Lucban Longanisa slowly-cooked in it’s own fat + Jack Daniels + a ton of garlic, pitted black olives and Penne Pasta. Again, like your tagline says -sometimes healthy. sometimes fatty. always happy.

      Thank you,

P.S. Details of the dish are at the link in my name.

    1. Bryanhahahaha September 12, 2012 at 4:06 am

    1. Keith September 13, 2012 at 7:19 pm

I’ve always been a big fan of this noodle dish from Vietnam and the only way I can eat it is by going to Viet restos around the Metro. I wanna know how to cook it. There are a lot of recipes online but I wanna get the idea and the how-to’s The Fat Kid Inside way.

    1. Kyle Garcia September 18, 2012 at 9:53 pm

Theres this place I always go to when I’m craving something pasta-ish its called cheesecake factory, and I would always get the pan seared salmon, its seared salmon with capers and slices of lemon and its served with angel hair pasta with fresh shaved parmesan oregano (I think thats how you spell it) and with sautéed spinach.
But I’m sure if you make your own version it would be so much better! :)

    1. jam September 24, 2012 at 11:45 am

Make a fil-french fusion dish. like coconut laing pasta topped with escargots de bourgogne. Simple straight forward dish.

I gained weight because of a sedentary lifestyle and overly indulging in foods I knew were bad for me, eating out too often, taking the easy route (microwavable dishes) and not caring what went in my body, before I knew it reached 240 lbs. I lost weight through pure dedication, tireless hours of hard work and yes, food. I cooked my way to fitness, making sure to only feed myself tasty well prepared dishes with all the right stuff, the perfect fuel, taking me down to 150lbs. Of course I indulge from time to time, as the fat kid still lurks inside of me; here you will find a little bit of everything for the sole purpose of sharing my passion for food and life.
