There is something so good about a well made grilled cheese that can just bring you back to that curbed streer where you would hang out with your friends, sitting on the hot pavement, sweating, laughing and beeming with excitement when your mom would bring out two pieces of white bread hugging drippiing processed cheese with a tall glass of your favourite iced juice.

I felt a little bit nostalgic the other day and just had to have a grilled cheese.

Just a little elevated with a tomato onion relish, a fried egg and some awesome Gardenia Wheat Cranberry loaf

Chop up 2 small red onion and half a tomato, put them in a small pot with a tbsp of olive oil, some salt, some pepper, a tbsp of balsamic vinegar and a tsp of sugar (optional). On medium just let it get sweet and caramelised.

Take two pieces of bread. Here i like to use Gardenia Wheat Cranberry Loaf because its high in fiber and has great bits of Cranberries in it (which are natural antioxydants by the way) giving a brust of flavour that complements the cheese really well. Fill this with a slice of mild cheddar cheese and a handful of mixed grated parmesan and mozarella. Fry off on medium in a pan with 1 tsp of butter and 2 tsps of olive oil. Cover with a plate (watch the vide) and flip when nice and brown on one side. To make a cheese crust place some more grated cheese straight on the pan and then cover it with the sandwich again and let stick.

Serve with the Relish and a Fried Egg.

Sandwiches are a great alternative to a quick lunch, they are convenient quick and full of nutrition (when done right), i wish more people would make more sandwiches at thome that way there would be a higher demand for sandwich shops!

      Nice.. a basic no-frills sandwich indeed. Can’t wait to try your take on it! I’m so glad you’ve been giving us sandwich recipes (keep them coming!). Its super helpful for a breakfast meal when you need something healthy/filling but also quick to make. Btw, what’s a brand of mild cheddar cheese that you would recommend? I want to try a brand that i haven’t yet. I’d appreciate the help. Thanks!

        are you sure? i think gardenia is present there also. if not there surely is some raisin bread. I’ve been to the supermarkets there, they have some good options

      As I type this comment, I am devouring my version of this. Aaaah I love cheese. I’m using wheat raisin bread cause Rustan’s didn’t have the cranberry one last night and it is still as good! The relish is a nice touch I must say, different texture and flavors! Thank you!
